Spaghetti Squash with Brown Butter (and variations)

Cook spaghetti squash (oven bake at  400, cut side down on parchment, 30-40 mi)

Melt 4 tbspn butter - cook until golden brown, over medium heat, 2-3 min. Add squash + 3 tbspn parsley. Add 1 tbspn ricotta cheese to shells, then add squash mixture.

OR

Brown butter + 10 sage leaves (cook until crisp) and mix in squash
